With the fall kicking into high gear, Jeff kindly let me know
(hint, hint) that he wanted to take a mini-vacation for just the two of us to escape and sneak off for some fun together. Isnβt he sweet?? He made plans all by himself and might I add, for a planner like myself, this was hard to hand over the reins and give him free will to decide anything and everything, BUT he chose wellβ¦ for the 1st weekend in October, weβll be visiting
Barnsley Resort outside Atlanta.
It looks like so much funβ¦ horseback ridingβthis should be interesting as I havenβt done this in years, nightly smore cookoutsβyes, please, rounds of championship golf, for him obviously, and a coupleβs massage for us, tooβ¦ ahhhhh! He made dinner reservations for both Friday and Saturday nights and weβre going to shoot skeet, walk a few trails, and just get some quality R&R time togetherβshould be a blast!
Back to my domestic duties, the other night I made a fabulous AND very easy dinner⦠the Stove Top Chicken Skillet
{via Kraft Foods} and it was tasty! (P.S. I also served it with a romaine/feta/cranberry/vinegarette salad).
Here is the recipe:
Ingredients
1.5 cups hot water
1/4 cup (1/2 stick) butter or margarine, melted
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
6 small boneless skinless chicken breast halves (1-1/2 lb.)
1 can (10-3/4 oz.) condensed cream of mushroom soup (I used cream of chicken)
1/3 cup Sour Cream
Directions
Mix hot water, butter, and stuffing mix
Cook chicken in large nonstick skillet sprayed with cooking spray on medium heat 5 minutes on each side
Mix soup and sour cream and pour over chicken
Top with stuffing and then cover
Cook on low heat 10 minutes or until chicken is done
And yes, it’s here–Football Friday… every Friday during college, my sorority sisters would run up and down our hall sscreaming “It’s {insert specific team here} Friday beeshes, get up and start drinking”, an deven now that we’re old and married and whatnot, I still get these beloved texts from my little Megan Price–made my morning! I’m sporting my first orange outfit of the season today, for I ALWAYS wear orange on Fridays AND Saturdays and we’re heading up to Knoxville after work to be reunited with some of these fabulous friends…

How fun! What a sweet fiance you have π I went to a really small (1200 students) college and we didn't have big football – we played at the high school in town, so there wasn't even tailgating! – so I love seeing how excited people get for their teams. Have a great weekend!
