I am a lover of all things breakfast…especially when you cook breakfast for dinner! Last week, I wanted to try something new for dinner, and I knew it was going to be either an absolute success or a major fail. Thank heavens this one turned out to be a keeper and I couldn’t wait to share…P.S. this would be a perfect dish to make for a morning baby/wedding brunch or shower as well.
I found the recipe here via Pinterest, but changed it a bit to make it my own-enjoy!
Ingredients
1 pie crust (found in your grocer’s freezer section and MUCH easier than making from scratch)
8 slices of crumbled bacon
2 cups shredded sharp cheddar cheese (any variety would work)
1/2 cup shredded parmesan cheese
2 tbsp flour
dash of salt and pepper
5 eggs
1.5 cups milk
Directions
Preheat oven to 350 degrees.
Fry bacon in skillet and set aside to cool off. Then break apart into crumbles/small pieces.
In a bowl, mix together eggs, milk, cheddar & parmesan cheeses, flour, salt & pepper & then add in bacon.
Pour ingredients into pie crust & bake for 45-60 minutes (you’ll know it’s done when you stick a toothpick in & it comes out clean)
