I shared (via Instagram) a dinner dish I made last week when some of you were astounded I was cooking…let’s clarify this my friends: the crock pot did ALL the work, once I dropped the ingredients in-haha. It was by no means anything fancy, but it was super easy, tasty (even CC approved), and made for a happy husband, too. I wanted to make sure I shared this new favorite!
Can of pineapple chunks or bits (do not drain!)
Directions
Spray crock pot with cooking spray and put a thin layer of brown sugar on bottom. (about 1/2 cup)
Lemon Pie Bars
Ingredients
1/2 cup confectioners’ sugar
1 cup butter, softened
4 eggs
1.5 cups white sugar
1/2 cup lemon juice
1 TBSP lemon zest
Directions
Preheat oven to 350 degrees.
Mix 2 cups of flour and confectioner’s sugar together. Cut in the butter. Mix well until dough resembles pie dough consistency. Press into a 9×13 baking pan.
Bake 15 to 20 minutes or until golden brown.
Beat together eggs, sugar, 4 TBSP flour, lemon juice, and lemon rind for at least 1 minute. Pour mixture over baked crust.
Bake the bars another 20 minutes, or until the lemon topping has set. Sprinkle with confectioner’s sugar when cooled.

Oo yum! My hubby's not a fan of ham or meat mixed with pineapple lol, but this is a time I am going to use my pregnancy and "crave" this so he'll make it for me ; ) Looks so good! Those lemon bars are on my list now, too. Just pinned them both! Thanks!
