One. Easy Chicken n Dumplins (ones that taste homemade)
I posted a snapshot on IG the other day sharing one of our most beloved dinner options…Chicken n Dumplins, and I had a good number of you asking for me to post the recipe on the blog. So, here ya go: and yes, this makes the perfect wintertime dinner, too, since apparently we live in an arctic tundra these days.
Chicken and Dumplings / via Southern Living
Ingredients
1 (32-oz.) container low-sodium chicken broth
1 (14-oz.) can low-sodium chicken broth
3 cups shredded cooked chicken (about 1 1/2 lb.)
1 (10 3/4-oz.) can reduced-fat cream of chicken soup
1 (10 3/4-oz.) can reduced fat cream of celery soup
1/4 tsp poultry seasoning
1 (10.2-oz.) can refrigerated jumbo buttermilk biscuits
Salt and pepper to taste
Directions
1. Bring first 6 ingredients to a boil in a Dutch oven over medium-high heat (I use this one and it’s amazing). Cover, reduce heat to low, and simmer, stirring occasionally, 5 minutes. Increase heat to medium-high; return to a low boil
2. Place biscuits on a lightly floured surface. Roll or pat each biscuit to 1/8-inch thickness; cut into 1/2-inch-wide strips (I use a pizza roller or pastry sliver which works very well!)
3. Drop strips, 1 at a time, into boiling broth mixture. Cover, reduce heat to low, and simmer 15 to 20 minutes, stirring occasionally to prevent dumplings from sticking.

Crossbody + Cognac = perfect everyday staple. This new beauty will be coming in extra handy for all my upcoming travels, too!
Four. Words of Affirmation
I’m a worry wart my nature…a person who is anxious, and thinks about things that may or may not happen. But I stumbled across this piece of goodness the other day and I saved it immediately, knowing it was speaking to me and maybe it will do the same to one of you out there. I’v had a few of these times in my life and my head definitely put me in the right place. JUST GO FOR IT!
Five. Home Love
Home improvements are moving right along…a little slower than I would like to admit, but I know it takes time and I want to make smart decisions and investments so with that comes patience and learning to “wait”. Next week, I will FINALLY be showing off my home office where I spend the majority of my time during the work week…it’s the happiest place in our home filled with loads of color. Next up are the girls’ rooms: In early February, we’ll be removing the carpet and putting down hardwoods and then the FUN decorating can commence. We will be moving Caroline to a big girl bed (hopefully before her 3rd birthday), redecorating her space (original inspiration here), and will be installing this amazing wallpaper in her bathroom. Yes, I might be a bit jealous. Carson will be staying in her crib for as long as we can keep her there, but we will be installing some fun new art and decor in her bed and bath and making it her own perfect little space. Cheers to progress!

You will loooove that RM cross body! I still wear my first one from probably 5 years ago all.the.time. Hands-down the best travel purse bc it holds a surprising amount while still being rather slim. I think we have the same dutch oven too. Happy Friday!
