Side dishes and salads… usually my go-to dish to bring to a friends’ house for a potluck + get together as I know most people are going to sign up for apps or desserts. Let’s be honest, if I’m in a pinch it’s easy to grab one of the salad kits and call it complete, but this blackberry goat cheese salad gets assembled in less than 10 minutes and it is DELISH, no matter what’s on the menu. It doesn’t have to be fancy to be REALLY good!

BLACKBERRY GOAT CHEESE SALAD
INGREDIENTS
- 12 oz of Arugula
- 4 oz Chèvre Goat Cheese [I like the honey variety from Trader Joes]
- 2 cups Blackberries
- 1/4 cup Pistachios [already shelled if possible]
- Honey Mustard Dressing [homemade would be great, but this variety is AMAZING and low calorie too]
DIRECTIONS
Toss arugula, blackberries and pistachios together. Then use a cheese grader to shred goat cheese and add to salad. Drizzle honey mustard dresses on top and serve immediately!
