I told you that one of my goals was to get back to sharing recipes each week here on the blog. I absolutely love browsing through my magazines finding new foods for the family to enjoy… specifically ones that help check off my low carb days on Monday and Tuesday! So today I’m sharing my favorite low carb chicken parmesan recipe.
This one was super easy to execute with prep time of under 10 minutes and then we paired it with a caesar salad as a side dish… and yep, so good the girls gobbled it up as well = a total mom win!!
Low Carb Chicken Parmesan
The Necessary Ingredients
- boneless chicken breasts [2] OR thinly sliced tenderloins [4]
- 2 tbsp olive oil
- 1 tsp italian seasoning
- 1 tsp garlic powder
- 1/2 tsp fresh cracked pepper
- 1/2 tsp crushed red pepper flakes
- 1 cup marinara [i use low sugar variety from TJ’s]
- 1/2 cup mozzarella cheese
- 1/2 cup parmesan cheese
- 1/2 cup crushed pork rinds [great low carb day crunch to use instead of breadcrumbs]
Direction Time
- start by preheating oven to 400 degrees and use cooking spray to coat bottom of 9×9 square baking dish
- in a bowl, combine chicken breasts, olive oil and all seasonings and stir… let soak for 5-10 minutes
- spread chicken into dish and then pour marinara sauce over… top with parmesan and mozzarella and then sprinkle crushed pork rinds on top
- bake at 400 degrees for 25-30 minutes, until cheese is melted and bubbly
- feel free to top with fresh basil and serve with salad
