I mentioned this a bit on Instagram this week, but I feel as though apples get overlooked when fall comes around. Instantly, everyone is focused on all things pumpkin and I know I am guilty of it, too. Especially since one of my darling daughters could live off of pumpkin = yes, Caroline is obsessed! While I was perusing this month’s latest Southern Living magazine [yes I am old school and still subscribe] I found this recipe and knew it would make for the perfect weekend breakfast. That way, Caroline and I could do it together and savor it even more.

Also, I cut the recipe in half because it was made for 12 and I only needed it for 6. This would make a great breakfast casserole to bring to an early morning tailgate or to drop off to someone on a food train for hungry families that need a bit of extra help! Enjoy 😉
