good eats | pumpkin cheesecake muffins

I am ALL in when it comes to seasonal baking, therefore I am SUPER thankful everyone in my family is pumpkin obsessed… or else I’d have to disown them!! My latest creation is in the form of these delciously tasty muffins [by way of Sugar Cooking]: the perfect brunch snack and/or tailgating treat.

I will say these were a bit time consuming and messy by way of how many ingredients and mixing bowls I had to use, but the end result was well worth the extra work and my girls RAVED at how great they were. Full bellies + happy hearts = a satisfied mama indeed!
