I know Thanksgiving is a little more than a week away and most of us are already planning our menu around turkey, cranberry sauce, sweet potato casserole and dressing but let’s face it… after all is said and done, you may just want something simple by way of a homemade salad to get back on track after all our bellies are stuffed!
We had Friendsgiving with some of Caroline’s friends + moms from school this past weekend and so I thought that was the perfect time to whip up something light and festive for fall. Easy, delish and even tricky tween approved, too!! Most of these ingredients I already had in my pantry and fridge so it made for easy execution. AND it would be scrumptious if you added in shredded rotisserie chickenor grilled steak and made it a full meal. Enjoy!
