How on earth will my kids eat ANYTHING with pumpkin, yet when I say the word vegetables they cringe??? Caroline could eat an entire pumpkin pie at one sitting [no I am not exaggerating] so in our kitchen, it’s officially PUMPKIN season… we’ve been whipping up pumpkin bread and cookies and also found a new recipe worth sharing for these TASTY Pumpkin Chocolate Chip Blondies. No true fall meal is complete without something sweet and these are an absolute must… perfect for taking to a tailgate or enjoying at home sweet home:
Pumpkin Chocolate Chip Blondies
INGREDIENTS
- 2 1/2 cups all-purpose flour
- 1 tbsp pumpkin pie spice
- 1 1/2 teaspoons baking soda
- 1 teaspoon kosher salt
- 1 cup salted butter
- 1 3/4 cups sugar
- 1 large egg
- 1 1/2 cups pure pumpkin
- 2 tbsp pure vanilla
- 1 1/2 cups chocolate chips
DIRECTIONS

In a large bowl, sift together the flour, pumpkin pie spice, baking soda and salt

In a separate bowl, beat the butter with an electric mixer. Add the sugar and beat until fluffy. Next mix in the egg, pumpkin and vanilla. Add in the flour mixture and mix until combined. Fold in the chocolate chips and then pour into the 9×13″ baking dish.

Bake for 35 to 40 minutes and then allow to cool for at least 20 minutes in pan and then remove from pan. Cut into bars and enjoy!

We love all things Pumpkin in our house for sure. We have made Pumpkin Bread and this insanely amazing, melt in your mouth moist Pumpkin Spice Cake already, but we may have to try these this weekend!
