{Recipe: Peppermint Bark Popcorn}

I found this recipe over at Our Best Bites and can’t wait to make this tomorrow for each member of my family…a little gift for each of them to take home after we celebrate on Christmas Day!! It looks very easy, and festive for the holiday, too:

Ingredients
16-20 cups of popped popcorn (about 2 bags of microwaved popcorn- NO BUTTER!)
1 lb. almond bark
1 6 oz. box of candy canes, crushed
2 tsp. of peppermint extract
3/4 cup semi-sweet chocolate chips

Directions
**Place popcorn in large mixing bowl
**Unwrap candy canes and crush; put all in a large zip-loc bag and then crush
**Dump crushed candy into the bowl with the popcorn
**Melt almond bark; break up and put into a glass measuring cup and microwave in 1 minute intervals until smooth
**When bark is melted, add peppermint extract {note: it will get a little lumpy, but that is normal}; pour over candy canes and popcorn
**Stir well until candy is evenly distributed; pour popcorn out onto wax paper and spread into an even layer
**Place chocolate chips in a microwave-safe bowl and microwave in 30 second intervals until melted smooth
**Drizzle melted chocolate over popcorn {you can use a fork or a zip-loc bag with the corner cut off}
**Leave to let the bark and chocolate harden and then enjoy!
