It’s been a bit since I shared a side dish recipe worthy of making a fuss over, but I assure you this one is a crowd pleaser in my house… EVEN the kids ask for it by name and I’ll take that as a win if it’s a way to get them eating more vegetables!

Long story short, I made these YEARS ago when I was trying to watch my carbs, but they’ve become a favorite for sure… not only to make at home, but they act as a perfect party side dish, especially during the holidays. They are easy to make and absolutely delicious = plus everything is better when you add bacon to it!
