When life gives you lemons, you make a pie!!! Or some fun limoncello spritzers, but that isn’t what this post is all about… yes, I was perusing my monthly edition of Better Homes and Gardens last week and instantly flagged this recipe the moment I saw it.
Not only does it sound like summer, but the idea of a frozen, cool-you-off-from-the-heat no bake kind of dessert was music to my ears… so naturally we grabbed the ingredients and whipped it up just in time to take to the lake for the Fourth of July weekend!!
Super easy to execute, this is no doubt going to be a crowd pleaser = sweet tangy with lemon zest and a graham cracker crust?? My vote is ALWAYS a yes. I did make a few substitutions to save time: started with a store bought graham cracker crust instead of making my own [hello working smarter not harder] and also got low fat cream cheese + sweetened condensed milk [cut the calories when you can!] and it was a breeze to assemble. Just make sure to make ahead of time so you can freeze overnight ;).
Indeed a true slice of summertime sweetness… dive right in!
