Two for Tuesday… Dinner Recipes

The past two nights I ventured out of my normal recipe rotation to try a few new things I had bookmarked–they were so tasty AND Jeff approved so I wanted to share these easy yummies…perfect for cooking in under an hour yet still having a great homecooked meal!
Steak, Spinach, and Mozzarella Roll-ups
Ingredients

1 lb flank steak, butterflied along grain
Salt and pepper
i clove minced garlic
6 oz shredded Mozzarella
8 oz  loose spinach leaves, washed, patted dry, stems removed
Wooden skewers, soaked in water
Directions
Place steak between 2 large pieces of plastic wrap;pound each side of steak until an even 1/4-inch thickness; rub garlic all over one side of steak; Spread cheese lengthwise in a 3-inch-wide strip down middle of steak and then top with spinach; starting at one edge of a long side, roll steak up tightly, tucking in filling as you go; Rub salt and pepper all over outside of roll and turn  roll so overlapping edge is on top. Push skewers through to hold together; slice into equal portions with a skewer in each; lay slices on sides and push skewer through so it sticks out about 1 inch; grill for 3 to 4 minutes per side for medium-rare; remove skewers and let set for 5 minutes before serving

Swiss Stuffing Chicken
Ingredients
4 boneless chicken breasts
1 can reduced fat/sodium cream of chicken soup
1/4 cup white wine
4 slices of swiss cheese
6 oz chicken flavored stuffing mix
1/2 cup melted butter
salt and pepper
Directions
Preheat oven to 350. Place  chicken in bottom of greased casserole dish; put one slice of swiss cheese on top of each chicken; mix together the soup, wine, melted butter, and S&P and pour over chicken; bake for 1 hour and enjoy!
