The kitchen is FINALLY open again… I’ll admit I’ve not been in the mood to cook for quite awhile. Honestly, when you’re playing chauffeur to the kids 5 days a week and you’re not at home to eat together, it usually has us grabbing meals on the go or making something speedy once we are at home, but now that summer has arrived, I am telling myself Jeff and I will get back into the kitchen, cooking up some of our favorite summer staples and venturing out of our comfort zone to integrate new items into our regular rotation.
First up, a salad designed for the sweetness of summer. I first found this recipe from my friend Christina at North Carolina Charm and I bookmarked it years ago to try. Well, better than never as I finally made it to take to a friends’ dinner party last week and everyone went back for seconds. It’s easy to assemble, could be great as an entree if you added some grilled chicken or shrimp on top, and is a perfect salad to whip up when you have less than 30 minutes to spare from start to finish.
